Hasselback Apples with Crumble

These soft-baked, sweet and sour Hasselback Apples with Crumble will become your new fall-time favorite! They are quick and easy to make and burst with cozy flavors. Top with your favorite ice cream and Katjes sour gummies for a colorful and fun treat!

  • 3 apples
  • ½ cup muesli
  • 3 tablespoons light brown sugar
  • 4 tablespoons walnuts chopped
  • 1 teaspoon ground cinnamon you can add more to taste
  • ½ teaspoon pumpkin spice
  • 3 tablespoons flax seed meal
  • Pinch of salt
  • 3 tablespoons maple syrup
  • 3 tablespoons extra-virgin olive oil or avocado oil

Instructions

  • Preheat the oven to 390°F (200°C). Cut the apples into halves and core the middle part with seeds using a spoon.
  • Starting at the outermost edges, make cuts almost all the way through each apple half, leaving around ⅛-inch (3 to 4mm) of space in between the cuts. To prevent cutting entirely through the apple, you can either lay a wooden spit or skewer on each side and tape it to the work surface or use a Hasselback cutter. You can refer to the how-to images in the blog post above.
  • Microwave the apple halves on a microwave-safe plate for around 2 minutes at 500W.
  • While the apples are microwaving, mix the following ingredients in a small bowl to prepare the filling: muesli, brown sugar, chopped walnuts, spices, flax meal, salt, maple syrup, and oil. Stir together until well combined.
  • Place the apples in a casserole dish. Spoon some of the filling onto a spoon and use the spoon or a brush to spread the filling into the apple fissures, stuffing them evenly. Continue until all cuts are filled. Sprinkle the remaining filling on top and around the sides of the apples!
  • Bake for 15 to 20 minutes. If you prefer softer apples, cover the casserole with a lid or foil and bake for an additional 45 minutes to 1 hour at 300°F (150°C).
  • Remove the apples from the oven and garnish them. Serve on a plate with a scoop of ice cream and top with Katjes Sour Gummies. For an extra indulgence, drizzle with vegan caramel. Enjoy!

Notes

Storage: Store leftovers in an airtight container in the fridge for up to 4 days. Reheat for a few minutes in a preheated oven at around 350°F (or in the microwave) to serve warm.
