Simmer vegetables & vegan chicken

  • Heat olive oil in a large pot over medium-high heat. Add onions and cook until translucent. Add garlic and cook for 30 seconds. Next, add vegan chicken strips and sauté until it begins to brown. Add carrots, potatoes, and mushrooms, and cook for two minutes. Then add vegetable broth and reduce the heat to low. Simmer until the vegetables soften.
  • Optional step after simmering vegetables and vegan chicken: Remove surface fats by degreasing them, afterward add prepared roux.

Prepare roux from scratch

  • While the stew is simmering, make the roux. Melt vegan butter in a saucepan over medium heat. Add the flour, spoon by spoon, and whisk constantly, making sure no big lumps are formed. Once all flour is incorporated let the mixture bubble up shortly. Then, while constantly whisking slowly add in the oat milk. Make sure the splash of oat milk is incorporated before adding more. When the mixture begins to thicken, reduce the heat to low. Add the cream cheese and cook for 10 minutes, still whisking regularly. Remove from the heat.

Assemble stew

  • Add the roux to the stew and stir to fully incorporate it. Increase the heat to medium and add the broccoli. Bring to a boil and simmer for an additional 5 to 10 minutes.
  • Add salt and pepper to taste. Remove from the heat, serve and enjoy!
