- 1 Cucumber thinly sliced
- 1 ripe Avocado
- 1-2 tablespoon lemon juice
- ⅛ teaspoon ground cumin
- ⅛ teaspoon black pepper
- ⅛ teaspoon smoked paprika
Using a vegetable peeler, thinly slice the cucumbers into thin strips.
In a bowl, mash the avocado, and stir in lemon juice, cumin, and pepper together. (Tweak lemon juice, salt, cumin, and pepper to taste.)
Lay one strip of cucumber down and thinly spread some of the avocados from one end to the other. Gently roll up until you have a finished round roll. (Secure them with a toothpick if needed.)
