How to make Streusel:

Put all ingredients: vegan butter, old fashioned oats, flour, cane sugar, and cinnamon into a bowl. Mix together with a fork until crumbly. Cover and put it in the fridge until batter is ready.

How to make batter:

Chop the apple into small pieces or cubes. You can peel it if preferred, but you don't have to.  Add all dry ingredients to a mixing bowl: flour, baking powder, cinnamon, flax meal and salt.

Add vegetable oil, apple sauce, almond milk and vanilla extract to dry ingredients and mix together with electric hand or stand mixer until smooth.  

How to make batter:

Then add sparkling water and quickly mix together. The dough should have a rather thick consistency.  With a spatula gently fold apple pieces into the dough. Scoop batter evenly into your muffin tray. Leave some space for the streusel.  Then crumble streusel on top.


Put into preheated oven and bake at 355°F / 180°C for 35-40 Minutes. To check if the muffins are ready, use the toothpick test. Take the muffins out when ready and let them cool down. Enjoy!
