Chipotle Sofritas Vegan

Ingredients

  • 14 ounces extra-firm tofu
  • 1 bell pepper cut into cubes
  • 1 tomato deseeded and cubed
  • ½ red onion finely chopped
  • 2 chipotle chilis in adobo sauce
  • 2 cloves of garlic
  • 1 teaspoon chili powder
  • 2 tablespoons tomato paste
  • Salt to taste
  • 1 teaspoon ground black cumin
  • ½ teaspoon ground cumin
  • 2 teaspoon apple cider vinegar
  • Lime juice to taste
  • Cooking oil for frying or baking

Instructions

  • Start by draining the tofu: Remove the tofu from its packaging and drain the excess liquid. Place the tofu in your tofu press for at least 30 minutes, ideally for several hours or overnight.
  • Prepare the sauce: In a high-speed blender, combine the bell pepper, tomato, red onion, chipotle chilis, garlic, chili powder, tomato paste, salt, ground black cumin, ground cumin, apple cider vinegar, and a squeeze of lime juice. Blend until you have a smooth sauce.
  • Shred the tofu: After the tofu has been drained and pressed, use a cheese grater to shred the tofu. You can also use a fork or crumble it with your hands to achieve a similar texture. However, shredding gives it the best texture.
  • Marinate the tofu: Place the shredded tofu in a bowl or container with the sauce. Mix well to ensure all the tofu is coated in the sauce. Let it marinate for at least 1 hour, or for the best flavor, refrigerate overnight or for up to two days.
  • Cooking option 1 - Pan-frying: Heat a lightly oiled pan over medium heat. Add the marinated tofu and cook for about 8-10 minutes, stirring occasionally, until the tofu is lightly browned and crispy.
    Cooking option 2 - Baking: Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it. Spread the marinated tofu evenly on the baking sheet. Spray some oil over the tofu to help it crisp up in the oven. Bake for approximately 25-30 minutes, or until the tofu is golden brown and crispy, stirring halfway through.
  • Once cooked, remove the tofu chipotle sofritas from the heat and allow them to cool slightly. Squeeze some additional lime juice over the sofritas for added tang, if desired.
  • Serve as desired! The vegan chipotle sofritas can be enjoyed in various ways, such as filling tacos, burritos, bowls, or as a topping for rice or salad. Customize with your favorite toppings and enjoy!

Notes

Don’t have a tofu press? Place your tofu on a cutting board and gently press it with a kitchen towel or paper towel to remove as much moisture as possible. You can place a heavy object on top of the tofu (like a plate with a weight) to help press it.
 
  • Storage:
    • Refrigeration: Keep leftovers in an airtight container in the fridge for 3-4 days.
    • Freezing: You can freeze the chipotle sofritas in a freezer-safe air-tight container or bag for 2-3 months. However, keep in mind that freezing tofu may alter its texture.
    • Thawing and Reheating: Thaw in the fridge, drain if necessary, then heat in a pan or microwave until warmed through.
