German Bread Spice - 'Brotgewürz'

This German Bread Spice gives your homemade bread a wonderful rich taste. Germans know a thing or two about bread. In fact we have more than 300 varieties! My home country is best known for its flavorful pumpernickel, rye, spelt, and whole-grain breads, each infused with different spices. This recipe is one of the most popular spice mixtures.

Equipment

  • spice grinder (or coffee grinder or mortar and pestle), spice jar

Ingredients

  • 2 tablespoons caraway, or cumin
  • 2 tablespoons anise
  • 2 tablespoons fennel
  • 2 tablespoons cilantro

Optional add ins:

  • 1 teaspoon nutmeg
  • 1 teaspoon pepper
  • 1 teaspoon allspice
  • 1 teaspoon cumin, or caraway

Instructions

  • Mix all seed and grind all together (for example: in a clean coffee grinder or with a mortar and pestle). Store with other spices in a dark, dry area of the house. If you prefer, you may instead mix together the whole seeds. Mix and transfer in your spice glass.
  • Depending on your taste preference add 1-2 tablespoon for a bread that contains 500g / 17.63 oz of flour.

Notes

If you are planning to use the bread with sweet toppings like jam, or other sweet spreads then I would recommend to use less of the bread spice, or none.
