- 40 grams chickpea flour (¼ cup)
- 40 grams coconut flour (⅓ cup)
- 5 pitted and softened medjool dates
- 120 grams tahini (½ cup)
- 3 teaspoon matcha powder (sub: 1 scoop of your favorite powdered dietary supplement)
- 1 tablespoons maple syrup optional
- sesame seeds for coating

Add all ingredients to your food processor and blend until a thick but moldable cookie dough-like texture forms. Scrape down sides as needed. If the mixture is too thick or crumbly, add more tahini. If the mixture is too wet, add more chickpea flour and pulse.
Scoop out 1 tablespoon amounts and gently roll into balls. Repeat until all dough is formed into balls. Roll balls through sesame seeds to coat. Refrigerate for 10-15 minutes before eating.
