Ingredients

  • ½ cup mango (in cubes, fresh or thawed)
  • 1 teaspoon vanilla syrup (more to taste)
  • ¾ cup milk of choice (we recommend soy milk)
  • 1 teaspoon matcha powder
  • ½ cup filtered water

Optional:

  • splash of coconut milk (for added creaminess)
  • more sweetener (like vanilla syrup)
  • coconut whipped cream (to garnish)

Instructions

  • Sift matcha into a bowl and add 1 tablespoon of lukewarm water. Whisk matcha until frothy and no clumps remain. Then keep whisking while adding the rest of the water. Mix until combined, and set aside.
  • Blend mango in an immersion blender. Then add vanilla syrup. Add the pureed mango to the bottom of a tall glass. Add more syrup, if desired and stir.
  • Pour milk slowly on top.
  • Shortly re-whisk matcha, then layer matcha on top.
  • Admire, stir and sip!

  • Use a fine mesh sieve to sift your matcha before whisking—it helps prevent clumps.
  • For best layering, pour slowly over the back of a spoon. It creates a soft, gradual transition between layers.
  • If your mango is extra sweet, you may want to use less vanilla syrup - or skip it altogether and use extract instead.
☕ Want it hot?
  • Use warm milk instead of cold and skip the ice.
  • Heat and whisk the matcha as normal (use warm/hot, but not boiling, water).
  • You can blend the mango and vanilla syrup, then gently warm the puree before layering, or just stir it into the warm milk directly for a creamier texture.
