Sift matcha into a bowl and add 1 tablespoon of lukewarm water. Whisk matcha until frothy and no clumps remain. Then keep whisking while adding the rest of the water. Mix until combined, and set aside.
Blend mango in an immersion blender. Then add vanilla syrup. Add the pureed mango to the bottom of a tall glass. Add more syrup, if desired and stir.
Pour milk slowly on top.
Shortly re-whisk matcha, then layer matcha on top.
Admire, stir and sip!
Pro Tips:
- Use a fine mesh sieve to sift your matcha before whisking—it helps prevent clumps.
- For best layering, pour slowly over the back of a spoon. It creates a soft, gradual transition between layers.
- If your mango is extra sweet, you may want to use less vanilla syrup - or skip it altogether and use extract instead.
☕ Want it hot?
- Use warm milk instead of cold and skip the ice.
- Heat and whisk the matcha as normal (use warm/hot, but not boiling, water).
- You can blend the mango and vanilla syrup, then gently warm the puree before layering, or just stir it into the warm milk directly for a creamier texture.
