Rainbow Gingerbread House

Make a vegan Rainbow Gingerbread House this holiday season! Not only is it eye-catching, but it’s super delicious and so easy to make.

Prepare Gingerbread:

  • Start by adding butter, maple syrup, agave, and brown sugar to a pan. Stir on low heat until the sugar has dissolved and the butter is melted. In a Mixing bowl add flour, baking soda, spices, and salt and stir together. Make a well in the center and pour in the melted sugar and butter mixture. Stir together to form a dough, shape it into a ball, and chill for at least 30 minutes to firm up.

While chilling prepare vegan royal icing:

  • In a clean bowl with an electric hand or stand mixer, whisk aquafaba until foamy in consistency (that can take a few minutes, don’t get impatient). Sift powdered sugar into the bowl with the foamy aquafaba and whisk on high speed for 3-5 minutes scraping down the sides of the bowl if needed. It’ll be very thick. Add a couple of drops of almond extract and rose water each, and mix for 1 more minute. Adjust the thickness of the icing by adding a few drops of the extract of your choice. Fill into a piping bag and place in the fridge until ready to use.

Bake Gingerbread:

  • Preheat oven to 190°C/370°F. Roll the dough out (coin thickness). Cut out with gingerbread house cookie cutters, and additional cookie shapes of your choice (such as Christmas trees, or snow people). Transfer to the prepared baking sheet.
  • Use the leftover gingerbread to make additional houses or other festive shapes like Gingerbread people. Chill for 20 mins, then bake for 8 to 10 minutes. Remove from the oven and allow to cool completely on trays.

Assemble Gingerbread House:

  • Put the house together with royal icing (how the parts fit together, depends on the cutouts you used). Then decorate with vegan icing and Katjes gummies. The rainbows make great shingles and doors. The Love gummies make great windows, wall sides, and roads. Katjes Love & Stars gummies are great for adding additional hearts or stars to your house.
