These cucumber avocado rolls are best eaten fresh. Store in an air-tight container in the fridge for no longer than 6 hours. Keep in mind that the avocado may brown over time.

Cucumber and Avocado Rolls
Ingredients
- 1 Cucumber thinly sliced
- 1 ripe Avocado
- 1-2 tablespoon lemon juice
- ⅛ teaspoon ground cumin
- ⅛ teaspoon black pepper
- ⅛ teaspoon smoked paprika
Instructions
- Using a vegetable peeler, thinly slice the cucumbers into thin strips.
- In a bowl, mash the avocado, and stir in lemon juice, cumin, and pepper together. (Tweak lemon juice, salt, cumin, and pepper to taste.)
- Lay one strip of cucumber down and thinly spread some of the avocados from one end to the other. Gently roll up until you have a finished round roll. (Secure them with a toothpick if needed.)
