    Cucumber and Avocado Rolls - a crispy and refreshing appetizer! They look fancy, but are ready in just 15 minutes. 'WOW' your guests with these, or enjoy as a fun snack on your own.     Cucumber roll-ups are one of those things that once you have one, you wonโ€™t be able to stop. I am so addicted to these! I love to serve them as an entrรฉe on special occasions, but they are also great as a quick, light meal or snack (especially during lunchtime). They have the crunch and creaminess, to keep you completely satisfied.

    ๐Ÿ“‹ Variations

    They are very versatile! You can add some more and other fillings to the cucumber, such as hummus, vegan cheese, or vegan deli slices, herbs like cilantro or leafy baby spinach, and more. Feel free to get creative!

    These cucumber avocado rolls are best eaten fresh. Store in an air-tight container in the fridge for no longer than 6 hours. Keep in mind that the avocado may brown over time.

    Ingredients
      

    • 1 Cucumber thinly sliced
    • 1 ripe Avocado
    • 1-2 tablespoon lemon juice
    • โ…› teaspoon ground cumin
    • โ…› teaspoon black pepper
    • โ…› teaspoon smoked paprika

    Instructions
     

    • Using a vegetable peeler, thinly slice the cucumbers into thin strips.
    • In a bowl, mash the avocado, and stir in lemon juice, cumin, and pepper together. (Tweak lemon juice, salt, cumin, and pepper to taste.)
    • Lay one strip of cucumber down and thinly spread some of the avocados from one end to the other. Gently roll up until you have a finished round roll. (Secure them with a toothpick if needed.)

    • Sprinkle with some smoked paprika and enjoy fresh!
