    Vegan Watermelon Salad (4 Ingredients)

    This vegan watermelon salad is full of the refreshing flavors of summer! Sweet and savory at the same time, perfect for those extra hot days. All you need is 4 simple ingredients: watermelon, arugula, vegan feta, and balsamic vinegar. A really simple, flavorful, and super juicy summer salad recipe ready in 15 minutes.

    🌱 Where to find vegan feta

    You can find vegan feta in most grocery stores as well as online nowadays. Some of my personal favorite brands to use are:

    • FollowYourHeart Feta Crumble's
    • Violife - Just Like Feta

    Another option is to make plant-based feta at home from scratch. A great alternative is Tofu which is pressed, cubed, seasoned, and marinated to taste like feta. Try our marinated vegan feta recipe which uses tofu! Other options to make it from scratch include using chickpea flour, or almonds.

    🍉 Watermelon Salad Variations

    Since this salad recipe is so simple, you may want to add some things to zhuzh it up. Other great additions include:

    • Cucumber
    • Olives
    • Red onion
    • Blueberries
    • Cherry tomatoes
    • Heirloom tomatoes
    • Avocado
    • Lime
    • Cherries, or dried cherries
    • Mint
    • Basil
    • Chili peppers
    • Fried tofu
    • Nuts and seeds

    🍽 What goes with watermelon salad?

    Watermelon is a versatile main dish but makes a fabulous side dish as well. Typical mains served with watermelon salad are fish or chicken. To veganize there you can serve it with vegan fish products or homemade dishes, such as banana blossom cod, or tofu salmon. Just as for fish, as an alternative to chicken, you can use store-bought varieties or make a homemade dish, like these vegan chicken breasts.

    You can even serve this vegan watermelon salad during your next barbecue, or cookout, with burgers, roasted chickpeas, grilled tofu, roasted potatoes, or corn ribs.

    🥣 Storage

    This salad tastes best fresh on the same day it is made. If you want to store leftovers in the fridge in a tightly-closed glass container for up to 2 days.

    Ingredients
      

    • 380 grams watermelon, freshly cut into bite-sized cubes (2 ½ cups)
    • 60 grams arugula (2 oz)
    • 140 grams vegan feta (5 oz)
    • 1-2 tablespoons balsamic vinegar
    • salt and pepper to taste, if wished

    • Add all ingredients to a salad bowl. Drizzle with balsamic and toss. Serve and enjoy!
