    Looking for a healthy and patriotic treat for the 4th of July or Memorial Day? Try this vegan red white and blue salad! It is whipped together in minutes and made with berries, spinach, and vegan feta. A great addition to your vegan 4th of July menu, Memorial Day, Labor Day BBQs, or picnics.

    ๐Ÿฅ— How to make a red white and blue salad

    Creating a red white and blue salad for a patriotic holiday such as 4th of July is super easy. All you need is ingredients in the colors of the American flag!

    In this recipe, we will use blueberries for the blue, strawberries for the red, and vegan feta (you can use homemade, or store-bought) for the white. To bulk the salad up in size and nutrition you can add spinach. However, if you donโ€™t want any other colors added you can also serve it without the spinach. 

    ๐Ÿซ Health benefits of eating berries

    Berries are proven to be the healthiest fruit you can eat! They are packed with nutrients and antioxidants and offer potential protection against cancer. In addition, to being good for your overall health, they boost your immune system and guard your liver and brain.

    What about the sugar in berries? The fructose in whole fruits, including berries, does not have the negative health effects associated with fructose in (table) sugar and high fructose corn syrup.

    ๐Ÿฅฃ Storage

    Eat this salad as fresh as possible. If you are planning on storing it, do not add cut strawberries and balsamic vinegar until shortly before serving. Store dressed leftovers in an air-tight container in the fridge for up to 2 days.

    Ingredients
      

    • 6 cups spinach
    • 1 cup sliced strawberries
    • 1 cup fresh blueberries
    • ยฝ cup of crumbled vegan feta cheese (you can use homemade, or store-bought)
    • drizzles balsamic vinegar
    • salt and pepper to taste

    • Wash and dry spinach, and blueberries. Washย and slice strawberries. Sprinkle fruit and vegan feta over spinach. Tossย salad with balsamic and serve.
